Do all apple watches have the retina display?
Yes. From the very first model.
Keep in mind that Retina Display is a somewhat vague definition. All it means is that a person with normal 20/20 vision can not see individual pixels when viewing it at what is considered a normal viewing distance for that device. Short of some really cheap laptops and desktops, almost all modern devices can now be considered to have retina displays. Most exceed retina, at least in terms of pixel density.
These days the competition is about who has the best color gamut, HDR (high dynamic range), brightness (nits), and true black. The last two versions of the Apple Watch score pretty well. The version 3 is decent.
